Rib Rub and Redneck Riviera Whiskey Pecan Pie with Maple Whiskey Cream Sauce

** Preheat Oven or Big Green Egg with Platesetter to 350 degrees F.
Ingredients: Pecan Pie
1 Frozen Pie Crust
1 cup white sugar
2 tablespoons brown sugar
1 tablespoon Pork U Rib Rub
Pinch of salt
1/3 cup of salted melted butter
1 cup light corn syrup
3 eggs
1 teaspoon vanilla extract
3 tablespoons Redneck Riviera Small Batch Whiskey
1 cup chopped pecans
Ingredients: Maple Whiskey Cream Sauce
1.5 cups heavy whipping cream
5 tablespoons real maple syrup
3 tablespoons light corn syrup
1 tablespoon Redneck Riviera Small Batch Whiskey
Directions: Pecan Pie
Combine the white sugar, brown sugar, Pork U Rib Rub, salt, corn syrup, butter, eggs, vanilla, and Redneck Riviera Whiskey in a bowl and mix thoroughly. Pour chopped pecan into the bottom of the pie crust.
Pour syrup mixture over the top making sure to leave 1/8 inch room for mixture to rise without overflowing in the cooking process. Bake the pie until its no longer loose and jiggly, about 45-60 minutes, being careful not to burn the crust or pecans. (Cover with a foil tent for part of baking process if you notice the crust browning to quickly)
Allow to cool for a couple hours or even overnight and serve with a drizzle of cold Maple Whiskey Cream Sauce. YUMMMMM!!
Directions: Maple Whiskey Cream Sauce
Pour whipping cream, maple syrup, and corn syrup into a sauce pan and stir over medium heat until thickened and reduced by about 1/3, about 15 minutes. Stir in the Redneck Riviera Whiskey and let sauce cook another 1-2 minutes. Remove from heat and transfer to squeeze bottle or bowl and refrigerate till thick and cold!
